These amazing meals were shared on one of the Wine & Dine Wednesdays. My mouth is watering just thinking of them. I love the way these wines bring out the flavors in these foods.

Beef Bourguignon in a slow cooker

Cut 6 slices of bacon into 1-inch pieces. Smash and chop 4 cloves of garlic. Chop one whole white onion. Peel and slice 2 carrots.

In a medium frying pan hot over medium heat, cook the bacon until crisp. When bacon is done, remove and place in a paper towel lined bowl. Leave all the bacon fat in the pan.

Turn up the heat on your pan full of bacon fat. Add 2-3 lbs. chuck roast (cut into small pieces) to the pan to sear in the hot bacon fat. Cook to brown the meat, approximately 2-3 minutes, then put the beef into your slow cooker. Leaving the Bacon/Beef fat in the frying pan.

Turn the heat down to medium. Add your Garlic, onions, and carrots to the pan of fat. Cook/Sauté them for 5-6 minutes while stirring scrape the bottom of pan to release the fat off the pan.

Add the bacon, garlic, onions, carrots, ½ cup of pearl onions (drained), 2 cups of low sodium beef broth, 2 cups of dry red wine, 3 sprigs of thyme (1½ tsp.), salt & pepper to taste, and 1 bay leaf to the slow cooker.

Cook for 4 hours on high or 8 hours on low.

15-30 minutes before serving this dish, create a slurry with water & cornstarch to thicken it up. Remove the bay leaf.

Serve with mashed potatoes, rice, or egg noodles and a beautiful red wine such as Cabernet Sauvignon from our Wine of the Month Club and Enjoy! Enjoy!

Baked Shrimp in Tomato, Dill, and Feta Sauce

Preheat oven to 425 F°. Coat the bottom of a large, oven-proof skillet with 1 Tbsp. extra-virgin olive oil. Heat it on stovetop over medium-high heat. Add 1 medium onion, chopped. Stir and cook until softened, about 3-5 minutes.

Next, add 2 cloves minced garlic and cook until fragrant, about 30 seconds. Add One 28-ounce can have diced, fire-roasted tomatoes, reduce heat, and let simmer for 5-10 minutes, until juices thicken slightly.

Finally, remove from heat and add 1 Tbsp. fresh minced dill (1 teaspoon dry dill can be substituted), ¼ fresh minced parsley, 1 lb. medium-sized raw deveined, peeled shrimp (thaw if frozen) and 3 ounces feta cheese, crumbled (about ⅔ cup)

Stir in herbs, shrimp, feta cheese, and salt and pepper to taste. Next, place pan in oven and back uncovered until shrimp are cooked through, about 10-12 minutes.

Pairs well with Sauvignon Blanc.
